Origin and Manufacturing Process: This ingredient is a natural fiber obtained by extracting polysaccharides from the roots of theAmorphophallus konjac, a plant harvested in China. The resulting powder is primarily composed of glucomannan.
Composition - Main active ingredient: Glucomannan (> 85%), a polysaccharide made up of two sugars (mannose and glucose).
Function and Mechanism of Action:Gelling agent. It allows for high viscosities in aqueous phases through a mechanism of water molecule retention. Gelation does not require any pH variation, addition of electrolytes, or heat.
